Married a non-Catholic
Can a man who has married a non-catholic without permission in a non-catholic Christian Church and who is now divorced marry a catholic in a catholic church? What process would he need to go through?

If that man was a Catholic at the time of that ceremony, he was obligated to observe canonical form of a marriage (canon 1108). He needs a short documentary declaration of nullity. It is a short process and involves filling out a simple form and attaching some documents. Go to your priest and he will be able to help you. It usually takes 1 to 2 weeks.
